I am interested in opening a snack bar in a fitness club. Anyone with experience or helpful suggestions?

I live in Phoenix. Exercise in LA Fitness and have noticed that has a couple of gyms w / out Shake sports bars. They are advertising to OPS Buz and thought you might be in it. It has a full time job today and I am willing to spend 30 hours a week and $ 10k for the launch. What else should I know …. grew up in restaurant biz.
